Awamori
Meet-Up Company List

Okinawa island is located at the southern tip of Japan and Kume-jima is a small island which is about 90 km further west from theOkinawa island. On this even more remote island, we make "Kumejima's Kumesen" with 'gratitude' and 'pride' for its rich naturalblessings. The main reason we insist on making Awamori on this island is "water". Only natural spring water is used throughout the entireproduction process, including the preparation of raw ingredients on this water-rich island.By making Awamori in an environmentsurrounded by nature in as close to natural conditions as possible, we are able to extract all the goodness from the ingredients.Kumejima's Kumesen was established in 1949; started shipping to the Okinawa island in 1975; started shipping to the mainlandJapan in 1983; started full-fledged overseas shipping in 2005. As of 2022, we are shipping to Asia, the USA, Europe, Africa and manyother countries and regions.Kumejima's Kumesen now boasts annual shipments of approximately 350,000 bottles (equivalent to 720ml bottle), making it theworld's top-selling Awamori distillery. Our commitment has become our taste, which is supported by our customers and we proudlypresent the products to new customers.

About "Ryukyu Awamori Kuusu no Sato" CooperaAbout "Ryukyu Awamori Kuusu no Sato" Cooperative In 2023, we will sell “Ryukyu Awamori Kusu no Sato 8 Year Kuusu44”.
Ryukyu Awamori kuusu no Sato" was established in May 2008 by 42 breweries in the Okinawa Prefecture as a cooperative to promote and educate people about Awamori culture and its appeal as well as specialize in the sale of old sake.
What is kuusu?
Also known as Old Awamori, it’s a type of aged Awamori, called "Kuusu" in the Okinawan language. There is a regulation that the distilled Awamori must be aged in a jar or enameled tank for at least three years. This technique of maturing for more than three years is also used for Scotch whisky, and it is allowed to be called "Scotch whisky" if it is matured for more than three years in a bonded warehouse in Scotland where barrels are matured. It is likely that the forerunners knew that aging would improve the quality of the drink and make it deeper and more delicious.

Founded in 1946. Yamakawa Shuzo is known for our tireless efforts in the production of Kusu(aged Awamori). All of our Kusu in our cellar with inscriptions of the year of aging are all aged more than the number of years written. We also have our own water source. We believe that Awamori is a liquor of peace. Okinawa was the only place in Japan where there was a ground battle when WW2 and most of Awamori was destroyed by this war. Kusu cannot be stored unless a peaceful environment is maintained. We will continue to produce awamori that can contribute to the happiness of our customers.

Founded in 1846, Shinzato Distillery is the oldest distillery in Okinawa.
At the time, the Ryukyu Kingdom authorized only 30 (later 40) people living in Sanga (Sakiyama, Akada, and Karasubori) in Shuri to produce liquor, and the awamori produced here was highly prized as a gift to China and Japan.
Since being recognized as one of them, we have inherited the traditional skills and spirit for more than 170 years, and the seventh-generation head of the distillery is currently protecting this will.
The new plant, completed in April 2006, enables computerized temperature control of the brewing tanks and has greatly expanded the production capacity to about three times that of the previous plant.
In addition, based on the HACCP hygiene management system, we produce awamori that is safe and secure, and superior in both quality and quantity.
While preserving traditional methods, we will continue to challenge new methods on a daily basis to create original tastes and delicious liquor.

Whiskies born in subtropical climate.
Based on Scottish blended whisky, the spirit is blended with 13-year aged Awamori  stored in oak barrels. The strong malt flavor is combined with a delicate, soft sweetness derived from rice. By using new heavy charred oak barrels, the rich and mellow flavor is complexly intertwined with the vanilla aroma derived from the aged awamori and the vanilla aroma derived from the oak barrels. An ultra-rare whiskey aged in the subtropical climate of Okinawa, Japan's South Island.
Trigger for development"We want to make a new whiskey that can only be made at the oldest distillery in Okinawa. We want to make a whiskey that is not only delicious, but also expresses the Okinawan character."
Features
1. Uses 13-year old Awamori* stored in oak barrels.
Based on blended whiskey from overseas (Scotland).A blend of 13-year-old Awamori stored in oak barrels,The strong flavor of malt is combined with the delicate and soft sweetness of rice.*Awamori is the oldest distilled liquor in Japan, and has been nurtured in the climate of Okinawa with a history of 600 years. During the Ryukyu Kingdom era, it was a purveyor to the royal government and was a valuable tribute to the Chinese emperor and generals of the shogunate. Awamori is made by sprinkling black koji mold on rice and growing it, adding water and Awamori yeast to make moromi, fermenting it, and distilling it with a single distillation machine.
2. Ripening in new heavy char barrels
By using new barrels of heavy char,The vanilla scent derived from old awamori and the vanilla scent derived from barrels. It is intricately intertwined, and a rich and mellow taste was born.
3. Non-chill filtered manufacturing method
Obtained by barrel aging without cold filtration.Because we are bottling a lot of flavor ingredients. You can enjoy the original taste of whiskey.
Stiffness
We are particular about the blend ratio of whiskey and awamori. We thought that if we added too much awamori, it would go beyond the framework of whiskey, and we would end up with a product that tasted good but was not perceived as whiskey. Therefore, in order to sell it as whiskey,While maintaining the original taste of whiskey, the goodness of Awamori, Okinawa's local sake, is also firmly preserved. We blended with the aim of achieving a taste that you can feel.
drinking suggestions

Awamori brewery is located in Ishigaki City, Okinawa Prefecture, and is located on an island about 400km south of the main island of Okinawa. Awamori is the main dish, but in recent years we have also been involved in the manufacture of liqueurs and spirits to make products that meet your needs.
