About "Ryukyu Awamori Kuusu no Sato" CooperaAbout "Ryukyu Awamori Kuusu no Sato" Cooperative In 2023, we will sell “Ryukyu Awamori Kusu no Sato 8 Year Kuusu44”.
Ryukyu Awamori kuusu no Sato" was established in May 2008 by 42 breweries in the Okinawa Prefecture as a cooperative to promote and educate people about Awamori culture and its appeal as well as specialize in the sale of old sake.
What is kuusu?
Also known as Old Awamori, it’s a type of aged Awamori, called "Kuusu" in the Okinawan language. There is a regulation that the distilled Awamori must be aged in a jar or enameled tank for at least three years. This technique of maturing for more than three years is also used for Scotch whisky, and it is allowed to be called "Scotch whisky" if it is matured for more than three years in a bonded warehouse in Scotland where barrels are matured. It is likely that the forerunners knew that aging would improve the quality of the drink and make it deeper and more delicious.

Product features: Kuusu no Sato has eight tanks, each of which is randomly filled with awamori from a different brewery and aged, resulting in a different flavor of old sake in each tank.
The 8-year-old sake introduced here was selected from one of these tanks for its deep flavor, which is characterized by the sweet aroma, richness, and thick umami taste of aged Awamori. The rich and mellow flavor is a gem of a product with a delicious taste that can only be found in old sake.

Founded in 1946. Yamakawa Shuzo is known for our tireless efforts in the production of Kusu(aged Awamori). All of our Kusu in our cellar with inscriptions of the year of aging are all aged more than the number of years written. We also have our own water source. We believe that Awamori is a liquor of peace. Okinawa was the only place in Japan where there was a ground battle when WW2 and most of Awamori was destroyed by this war. Kusu cannot be stored unless a peaceful environment is maintained. We will continue to produce awamori that can contribute to the happiness of our customers.

Founded in 1846, Shinzato Distillery is the oldest distillery in Okinawa. 
At the time, the Ryukyu Kingdom authorized only 30 (later 40) people living in Sanga (Sakiyama, Akada, and Karasubori) in Shuri to produce liquor, and the awamori produced here was highly prized as a gift to China and Japan.
Since being recognized as one of them, we have inherited the traditional skills and spirit for more than 170 years, and the seventh-generation head of the distillery is currently protecting this will.
The new plant, completed in April 2006, enables computerized temperature control of the brewing tanks and has greatly expanded the production capacity to about three times that of the previous plant.
In addition, based on the HACCP hygiene management system, we produce awamori that is safe and secure, and superior in both quality and quantity.
While preserving traditional methods, we will continue to challenge new methods on a daily basis to create original tastes and delicious liquor.

During the Ryukyu Kingdom era, it was a purveyor to the royal government and was a valuable tribute to the Chinese emperor and generals of the shogunate. Awamori is made by sprinkling black koji mold on rice and growing it, adding water and Awamori yeast to make moromi, fermenting it, and distilling it with a single distillation machine.
