Our brewery has introduced modern facilities that are ranked among the best in the northeast region of Japan. these facilities have achieved significant labor savings by automatizing most parts of the sake-making process, realizing high-quality sake-making with less than half of the conventional number of staff. YOROZUYA JOZOTEN, a sake brewery founded in 1790 in the town of Fujikawa, Minamikoma district of Yamanashi Prefecture, a land rich in nature overlooking the magnificent Mt. Fuji. Founded on the idea that "When it comes to local Sake, we want to keep to our local Sake rice, water source, and people", we have local Sake rice farm contractors as well as our own in-house rice milling, and so roughly 90% of the Sake rice used is taken from local suppliers in Fujikawa Town. Our Sake brewing process begins from rice harvesting, which we polish local Sake rice in-house and brew using the finest underground water source at the southernmost peak of the Southern Alps. The name of our top representative label brand "Shunnouten" was taken from the elegant meaning of "Spring Warbler Song", which is named after the praising song by the famous Waka poet Akiko Yosano who visited us and sang of great affirmation of the flavor, aroma, and presentation of this Sake brand. The quality of the Sake is refreshing with a good sharpness, and drinks dry, so we are particularly persistent on making pure rice Sake that retains the flavor of the rice. It's not a spotlight liquor label, but it's a liquor that puts the drinker in the spotlight. In 2019, the label was the gold prize winner at the Warmed Sake contest, the runner up silver prize of the best design category at the 1st Milan SAKE Challenge, and silver prize in the pure rice Sake category as well.

YAGI SHUZOBU Co.,Ltd., which produced the "Yamatan-masamune" sake, was founded in Imabari-city, Ehime-prefecture in 1831. It is said that the name of the sake came from the family crest of "Tanbaya" and the name of the "Masamune" sword. "Yamatan-masamune" has won Gold (the first) prizes 20 times in total and for 3 years in a row in the Annual Japan Sake Awards (which is the most prestigious sake award in Japan). The quality receives a high evaluation.

Since then, this Kobe-based business has pursued the ideal "dry yet rich taste" by skillfully utilizing the abundant natural resourses of the Rokko Mountains and the fermentation power of microbes. In 1918, our company was appointed as purveyors to the Imperial Household Agency. Even today, 360 years after our founding, our company remains popular along with our slogan, "Tasty food puts me in the mood for a dry Kiku-Masamune." Although Kiku-Masamune preserves the ancient Kimoto method and traditional barrel-making craftsmanship, we also use the latest science to analyze vast amounts of fermentation data and to develop new yeasts. Yamanashi
Lumiere Winery is one of the oldest family-own wineries of Japan. Established by an ex-Samurai Mr. Tokugi Furiya (great-great-grandfather of current 5th CEO) in 1885 in Yamanashi pref. Yamanashi is well-known region for Mt. Fuji, wines & fruits, takes only 1.5 hours from Tokyo by car/train. Our own vineyards use "No-tillage grass viticulture" to keep soil health with biodiversity, so we don't use any chemical fertilizer nor chemical pesticides. We have valuable antique stone fermenter, built in 1901, called "Ishi-Gura". It is registered as Japan Heritage. [Ishigura Wine] Lumiere wines have won medals at international wine competitions for many times. [e.g. Platinum at Decanter World Wine Awards 2021] Our wines have been provided to the Imperial family since long time ago, also once to Mr. Clinton, the former U.S. President when he visitited Japan. Especially, our "Sparkling Orange" is very unique wine, it's made from Koshu grape, color is orange, the foam is creamy. As it's made by "Maceration Carbonic method" like Beaujore Nouveau and traditional "Champagne method". We keep on challenging to make wines the better and the better. ― What is "Milles" grape variety ?
In 1870’s, Dr. William. H. Mills developed this grape variety in Ontario by mating Muscat Hamburg & Clevering.
Once Milles grapes were widely cultivated as a brewing grape for red wine, mainly in Yamanashi pref.
At that time, its quality was highly evaluated, and it was treated as a raw material for Red wine, as a variety equal to Merlot.
However, the cultivated area gradually decreased due to the difficulty of cultivation and the grape color is quite light for making red wines.
So now, it’s va ery rare grape not only in Japan, very rare in the world.

The roots of Hirata Sake Brewery are in the Edo period(1769). Its predecessor was a merchant who ran a bintsuke oil and candle shop in the center of Hida Takayama. Entering the Meiji era, the 5th generation founded a brewery. Since then, we have been studying and brewing sake with the motto "Sake is something that is brewed and raised", sometimes strict and sometimes gently and lovingly. An important thing for sake. we think it's the climate and people of the area. Sake is made by the hands of the brewer. And rice, water and fermentation come from the land year after year. They are grace from heaven. We think that sake is their harmony. The current roots of Hirata Sake Brewery are Ise and Hida. Each local rice such as "Isehikari" and "Hidahomare" and the underground water of the clear stream Miyagawa are used. The history of Ise, the land of God, the advantage of Hida, where the cold is severe, and the technology cultivated in tradition. That is Hirata Sake Brewery 's sake.

Junmai Ginjo, a new addition to our Shoryunomai series. This sake is made by polishing up to 50% of the miraculous rice "Isehikari" born in Jingu Shinden of Ise Jingu and "Hidahomare" from Gifu. The fragrant sake is easy to drink. It has a little acidity to make it go well with cooking. Recommended served lightly chilled (not too cold) or at room temperature. If the sake has aged for six months, lukewarm kanzake is also suggested.

Amber-colored, slightly sweet raw sake that has been aged for more than 10 years.
Compared to the long-term aged old sake liquor, it is a little rougher (youthful), but the color, aroma, and taste are convinced that it will come closer in the future.Please enjoy the soft, mellow, and deep taste.

This is a new product that was just commercialized in May 2022. Two types of yeast are used to bring out both the ease of drinking and the high aroma. This results in a very well-balanced sake with a very high aroma, which is unique to daiginjo, and a strong rice flavor, which is unique to junmai sake. It has a very pleasant ginjo aroma reminiscent of melon or banana.

In 1711, Ozeki was established by the first Chobei Osakaya of the Osabe family in Imazu, Nishinomiya City, Hyogo Prefecture. Our head office is still located there. Since its founding, Ozeki has enjoyed longstanding and widespread patronage as a choice sake from Nada. In 2011, thanks to this support, Ozeki marks its 300th anniversary. Known as a sake region, Nada (formally called Imazu Village in Muko County, Settsu Province) is blessed with so-called Miyamizu, or groundwater originating in the Rokko mountain system. The region is also ideal for rice production, including Yamada-nishiki, the renowned sake rice. In the Edo period, it's said, kudari-zake (sake shipped from Kyoto and Osaka to Edo) from Nada and transported from Imazu port to Edo by taru-kaisen (cargo-vessels carrying sake barrels) was both fresher and tastier than sake transported by land and was prized as a premium sake. While many of the old documents of this time were lost in the large-scale air raids in the last days of the war, the unrelenting pursuit of the craftsmen's skills found exclusively at Ozeki and a passion for sake-making have been handed on to successive generations of craftspersons, bringing Ozeki to this day. This Junmaishu is a Full-bodied, crisp sake brewed with Kyokai Yeast No. 1 in the same traditional way as it was 100 years ago.
In 1964, the government collected yeast from all over Japan for the purpose of safe brewing and quality improvement, and the Sakuramasamune yeast was selected as the best yeast and distributed throughout Japan.
However, this yeast was lost during the confusion of the war. In recent years, it has been confirmed that this yeast still exists, and it has returned to our brewery for the first time in 60 years.

This sake, given the prestigious name ‘Yakimare’ in the Edo Period, is brewerd with the legendary No.1 yeast, the first one isolated and cultured nationally. The first impression is of overall savoury aromas. This is followed by dried herbal notes, cinnamon and caramel, a hint of sherry similar to amontillado, nougat, anis and more, revealing substantial complexity. There is a subtle saline tang, possibly from succinic acid, high acidity, and delicate bitterness leading to bone-dry palate. This medium bodied sake finishes with abundant, lingering nutty flavours.

This Tokubetsu(Special) Junmaishu is brewed from plenty of Yamada-Nishiki from Hyogo prefecture which is one of the best types of rice for brewing sake. "Miyamizu" is the ground water that the 6th head of Sakuramasamune, Yamamura Tazaemon, discovered. This Light-bodied and semi-dry taste, which extracts the hidden umami flavour of rice.

Toa Shuzo began brewing sake in Chichibu in 1625. In 1941, the company moved its headquarters to Hanyu City, a grain-growing region blessed with abundant water, and has continued its nearly 400-year history.
