Yamanashi

YOROZUYA JOZOTEN, a sake brewery founded in 1790 in the town of Fujikawa, Minamikoma district of Yamanashi Prefecture, a land rich in nature overlooking the magnificent Mt. Fuji. Founded on the idea that "When it comes to local Sake, we want to keep to our local Sake rice, water source, and people", we have local Sake rice farm contractors as well as our own in-house rice milling, and so roughly 90% of the Sake rice used is taken from local suppliers in Fujikawa Town. Our Sake brewing process begins from rice harvesting, which we polish local Sake rice in-house and brew using the finest underground water source at the southernmost peak of the Southern Alps. The name of our top representative label brand "Shunnouten" was taken from the elegant meaning of "Spring Warbler Song", which is named after the praising song by the famous Waka poet Akiko Yosano who visited us and sang of great affirmation of the flavor, aroma, and presentation of this Sake brand. The quality of the Sake is refreshing with a good sharpness, and drinks dry, so we are particularly persistent on making pure rice Sake that retains the flavor of the rice. It's not a spotlight liquor label, but it's a liquor that puts the drinker in the spotlight. In 2019, the label was the gold prize winner at the Warmed Sake contest, the runner up silver prize of the best design category at the 1st Milan SAKE Challenge, and silver prize in the pure rice Sake category as well.

Hyogo

The year was 1659, during the reign of Tokugawa Ietsuna, fourth shogun of the Tokugawa dynasty. Since then, this Kobe-based business has pursued the ideal "dry yet rich taste" by skillfully utilizing the abundant natural resourses of the Rokko Mountains and the fermentation power of microbes. In 1918, our company was appointed as purveyors to the Imperial Household Agency. Even today, 360 years after our founding, our company remains popular along with our slogan, "Tasty food puts me in the mood for a dry Kiku-Masamune." Although Kiku-Masamune preserves the ancient Kimoto method and traditional barrel-making craftsmanship, we also use the latest science to analyze vast amounts of fermentation data and to develop new yeasts. Our shiboritate Gin-Pack, which won two awards at the International Wine Challenge 2019- Great Value Champion sake in the Sake Awards category as well as the first-place Futsu-shu Trophy-has revolutionized daily sake as a sake with a low rice polishing ratio and an "effervescent" aroma superior to that of daiginjo. We achieved this by using our newly developed HA14 yeast. Kiku-Masamune will continue to pursue the ideal of authentic sake with our vision of value creation through tradition and innovation.

[Ishigura Wine] Lumiere wines have won medals at international wine competitions for many times. [e.g. Platinum at Decanter World Wine Awards 2021] Our wines have been provided to the Imperial family since long time ago, also once to Mr. Clinton, the former U.S. President when he visitited Japan. Especially, our "Sparkling Orange" is very unique wine, it's made from Koshu grape, color is orange, the foam is creamy. As it's made by "Maceration Carbonic method" like Beaujore Nouveau and traditional "Champagne method". We keep on challenging to make wines the better and the better. So we take the best care of our vineyards first. Wishing to be a shining "light" (= Lumiere) of Japanese wine..

Prestige Class Mills <Wine>   750ml.  Standard price in Japan   ¥3,080

― What is "Milles" grape variety ?

In 1870’s, Dr. William. H. Mills developed this grape variety in Ontario by mating Muscat Hamburg & Clevering.

Once Milles grapes were widely cultivated as a brewing grape for red wine, mainly in Yamanashi pref.

At that time, its quality was highly evaluated, and it was treated as a raw material for Red wine, as a variety equal to Merlot.

However, the cultivated area gradually decreased due to the difficulty of cultivation and the grape color is quite light for making red wines.

So now, it’s va ery rare grape not only in Japan, very rare in the world.

― How is the taste of "Milles" white wine ?

The attractive point is the unique flavor, not like any other grapes. It's like Lychee, Rose, and Muscat flavor like fresh citrus fruit...

Pairs good with Asian Foods, Spicy Foods like Curry, or Cheese.

Gifu

The roots of Hirata Sake Brewery are in the Edo period(1769). Its predecessor was a merchant who ran a bintsuke oil and candle shop in the center of Hida Takayama. Entering the Meiji era, the 5th generation founded a brewery. Since then, we have been studying and brewing sake with the motto "Sake is something that is brewed and raised", sometimes strict and sometimes gently and lovingly. An important thing for sake. we think it's the climate and people of the area. Sake is made by the hands of the brewer. And rice, water and fermentation come from the land year after year. They are grace from heaven. We think that sake is their harmony. The current roots of Hirata Sake Brewery are Ise and Hida. Each local rice such as "Isehikari" and "Hidahomare" and the underground water of the clear stream Miyagawa are used. The history of Ise, the land of God, the advantage of Hida, where the cold is severe, and the technology cultivated in tradition. That is Hirata Sake Brewery 's sake.

Hyogo

In 1711, Ozeki was established by the first Chobei Osakaya of the Osabe family in Imazu, Nishinomiya City, Hyogo Prefecture. Our head office is still located there. Since its founding, Ozeki has enjoyed longstanding and widespread patronage as a choice sake from Nada. In 2011, thanks to this support, Ozeki marks its 300th anniversary. Known as a sake region, Nada (formally called Imazu Village in Muko County, Settsu Province) is blessed with so-called Miyamizu, or groundwater originating in the Rokko mountain system. The region is also ideal for rice production, including Yamada-nishiki, the renowned sake rice. In the Edo period, it's said, kudari-zake (sake shipped from Kyoto and Osaka to Edo) from Nada and transported from Imazu port to Edo by taru-kaisen (cargo-vessels carrying sake barrels) was both fresher and tastier than sake transported by land and was prized as a premium sake. While many of the old documents of this time were lost in the large-scale air raids in the last days of the war, the unrelenting pursuit of the craftsmen's skills found exclusively at Ozeki and a passion for sake-making have been handed on to successive generations of craftspersons, bringing Ozeki to this day. Japanese sake embodies a food culture passed on from antiquity. We believe sake emerges from an ongoing dialogue between the sake maker and natural elements, like the koji mold. The fermentation techniques we've cultivated represent an exciting area of technology, one that promises numerous unexplored treasures beyond Japanese sake. Lifestyles and consumer demands have diversified in recent years, and the pace of change in lifestyles and consumer demands have accelerated. Despite these changes, drawing on both new perspectives and the wisdom and skills of our predecessors, we at Ozeki remain committed to proposing new products to customers that will help them lead healthy, joyful lives. We are grateful for your continuing support for the Ozeki brand.

Junmai Daiginjo Jundan Jikomi   <Sake> 700ml     Standard price in Japan ¥10,000

Recognized as a premier sake, in terms of both fragrance and flavor, based on Parker Points, a wine assesment scale with worldwide authority.

Sweet and full-bodied. Perfect with French, Italian and Asian cuisine.

A mineral flavor reminiscent of windswept rocks. A creamy sensation onthe tongue. Hints of cirtus, peach, and dairy, with a ingering aftertaste.

Judan, the pinnacle of sake.Junmai daiginjo-shu that breaks through conventional thinking.

Ultra high-grade sake that transcends received wisdom; an aroma and flavor surpasses even botrytized wines; one we can proudly proclaim to the world, whose name "Judan"(ten-stage) indicates the ultimate grade.

The unrivaled Jundan Jikomi

Whereas ordinary sake is brewed using sandan jikomi(three-stage preparation), Judan Jikomi employs ten-stage preparation that takes over twise as long. This sake is produced using special brewing techniques that slowly draw out the best flavor at low tempreture.

A new realm of rice sweetness, with a Sake Meter Value of -30.

Uses only Yamada Nishiki grown in Hyogo Prefecture, the best quality rice in Japan. Usually, sweetness decreases the longer sake's brewed, but Judan Jikomi's increases as the days pass.

SAKURAMASAMUNE Yakimare Kyokai Yeast No.1  <Sake> 720ml. Standard price in Japan  ¥2,643

This Junmaishu is a Full-bodied, crisp sake brewed with Kyokai Yeast No. 1 in the same traditional way as it was 100 years ago.

In 1964, the government collected yeast from all over Japan for the purpose of safe brewing and quality improvement, and the Sakuramasamune yeast was selected as the best yeast and distributed throughout Japan.

However, this yeast was lost during the confusion of the war. In recent years, it has been confirmed that this yeast still exists, and it has returned to our brewery for the first time in 60 years.

■Tasting Comment by Kenichi Ohashi - Master of Wine

This sake, given the prestigious name ‘Yakimare’ in the Edo Period, is brewerd with the legendary No.1 yeast, the first one isolated and cultured nationally. The first impression is of overall savoury aromas. This is followed by dried herbal notes, cinnamon and caramel, a hint of sherry similar to amontillado, nougat, anis and more, revealing substantial complexity. There is a subtle saline tang, possibly from succinic acid, high acidity, and delicate bitterness leading to bone-dry palate. This medium bodied sake finishes with abundant, lingering nutty flavours.

SAKURAMASAMUNE Miyamizunohana  <Sake> 720ml. Standard price in Japan  ¥1,373

This Tokubetsu(Special) Junmaishu is brewed from plenty of Yamada-Nishiki from Hyogo prefecture which is one of the best types of rice for brewing sake.  "Miyamizu" is the ground water that the 6th head of Sakuramasamune, Yamamura Tazaemon, discovered. This Light-bodied and semi-dry taste, which extracts the hidden umami flavour of rice.

<Awards>【2022】・Junmai Cotegory/Silver award at International Wine Challenge

■Tasting Comment by Kenichi Ohashi - Master of Wine

Spicy character with notes of nutmeg alongside modest fruity aromas of banana and peach. There are also notes of jasmine tea and quality steamed rice. The palate is structured by relatively high savoury acidity, accented by hints of sweetness. Although the palate is overall round, it is also definitely dry, showing grip with a mineral quality that lends precision to the finish. A spicy sake with medium-plus body and lingering jasmine tea-like flavours.

Vision:SAKE to the World Led by a female Japanese entrepreneur, we set out to craft a premium ICHIDO sparkling sake that would challenge the preconceived notions of both traditional sake and sparkling wine – something a little different, for those who pride themselves on living their lives a little differently. Because we believe that sake can be Japanese in origin, but international in its appeal; that sake can go beyond the sushi menu, bubbling up alongside traditional sparkling wines everywhere from birthdays, to weddings, to brunch, to the little everyday celebrations that make life truly special. ICHIDO Sparkling SAKE is the clean alternative to wine with 7-15% alcohol by volume, but Gluten-free, Sulfite-free, Tannin-free, and five times less acidity than wine. It made from only Japanese natural ingredients – premium non-GMO rice, pure soft water, yeast, and handmade koji and therefore best matched not only with Japanese cuisine such as Wagyu and Sushi, but also with any seafoods. ICHIDO contains the best finest bubbles created by secondary fermentation and the new rich taste discovered with world-wide communication. Ishikawa

A traditional sake brewery that has continued since the middle of the Edo period Founded, 10th year of the treasure calendar, 1760 AD, 262 years since then, we are working hard every day with pride that we continue to brew Japan sake, which is the traditional culture of Japan. The current tenth generation lord has never forgotten the samurai spirit. The Japan sake brewed by Mr. Du's skilled technique of sticking to water and rice to the point of being strict and uncompromising can be said to be the real sake. ■Tanaka Sake Brewery Location Tanaka Sake Brewery is located in "Kami-machi, Miyagi Prefecture." Located in the northwestern part of the Sendai Plain, Kami-machi is a fertile area where melted snow from the Ou Mountains constantly flows into the region. ■History of Tanaka Sake Brewery In 1789, the year of the French Revolution, Rinbei Tanaka, the most famous draper and money changer in the Date clan, founded the Tanaka Sake Brewery in this town blessed with water and rice. ■Passing Down the Art of Sake Brewing For more than 230 years since its establishment, Tanaka Sake Brewery has inherited traditional sake brewing techniques (kimoto and yamahai), using only the best quality water and rice. Tanaka Sake Brewery continues to use handmade processes, such as the koji tray method for all koji, traditional oke steaming for rice, and cedar heating for the sake mother, to produce "sake with assertive quality," and has become a brewery trusted by the community while maintaining the traditional sake brewing process. ■New Challenges We contribute to the local community by purchasing half of our sake rice from local contract farmers. Recently, we have obtained "vegan certification" and are in the process of obtaining "organic" and "kosher" certifications. Recently, we have begun efforts to export our sake overseas, and it has already become one of the most imported sake brands in Australia.

Ehime

Minakuchi Shuzo was founded in 1895. Since then, we have produced sake in Dogo. We are the only brewery not only in Dogo, but also in Matsuyama and Ehime that has gone hand-in-hand with Dogo Onsen Honkan. Our main products include “Seishu Nikitatsu,” high-quality sake whose brand name is derived from “Port filled with benevolence and great joy,” “Dogo Kurazake,” branded local sake of Dogo, “Dogo Beer,” refreshment beer after your bath, “Dogo Ale,” sparkling liquor that is based on Ehime-grown fruit juice, “Dogo Shochu,” which is made from Ehime-grown agricultural, forestry and fishery brand products, and “Dogo Cider,” refreshment cider after your bath. Old and traditional, Minakuchi Shuzo had the main building doubling as a shop designated as a registered tangible cultural property (structure). Built in 1917, the main building is a two-story wooden house that creates a liberal Taisho era (from the late 1910s to the early 1920s) atmosphere with the exterior plastered and wainscoted and the second floor equipped with western round windows. As a seven-times gold award winner (the very best among the award winners) in the Annual Japan Sake Awards, we produce the “Dogo story” so that visitors from across the world will keep a good memory of Dogo in their heart.

Tokyo

Godo Shusei was established by merging four Shochu companies in Asahikawa city of Hokkaido in 1924. Originally, the company was founded by Mr. Denbei Kamiya. He opened his liquor shop in 1880 and started to produce pure alcohol in 1900 in Asahikawa city as the first indipendent alcohol distillery. Currently, we are producing Pure alcohol in Hokkaido and Shizuoka, producing Sake and Shochu in Hokkaido and producing Plum wines adn Ready-To-Drink canned products etc, in Chiba. In this opportunity, we would like to introduce our Sake made in Hokkaido and Plum wines made in Chiba. Especially for Sake producing, Hokkaido is one of the best area to brew, because its cool climate gives an advantage for lower temperature fermentation which gives Sake floral, clear and smooth taste. Plum wines production in Chiba has a long history more than 80 years and our matured technique express the best balance between acidity and sweetness in Plum wines. We hope that our alcohol beverages can be a unique and typical taste of Sake in Hokkaido and authentic Plum wines for the US consumers.
