Midorikawa

MIDORIKAWA SAKE COMPANY

Niigata

Established in 1884, Midorikawa, now under its 5th generation president, has its brewery located in Uonuma City, Niigata Prefecture. Surrounded by mountains, Uonuma faces heavy snowfall during the winter. This harsh winter environment provides pristine water, which, combined with the beautiful natural surroundings, nurtures delicious rice. Uonuma is renowned as the top rice-producing region in Japan. Abundant water resources, the finest rice, and the rigorous winter cold create an ideal environment for sake production. For brewing, we use underground spring water that has been sourced from depths of 50 to 60 meters on their own premises over many years. This exceptionally clean soft water is a key factor behind the delicate and refined quality of Midorikawa sake. The production process emphasizes "aging" and "blending." The delicate, refined sake develops through long-term, low-temperature fermentation that takes advantage of Uonuma's climate. After about a year of "aging," the sake becomes smooth and mellow, and then it is enhanced with complexity through careful "blending" that maximizes human sensibility. The resulting elegant profile, with its delicate and intricate flavors, is sure to captivate people in any setting. Please feel the essence of the two significant philosophies that guide the essence of sake-making: "Terroir" and "Human sensibility."

The innovation was patented in Japan and the UK. A distillation still made of copper and tin, and the distillation process of first distillation and redistillation, the two met and produced an outstanding spirit.

Aroma: Strong orange oil, savory rustic malt, mint and peat, sweet chestnut, faint hoji-cha(roasted tea)

B153 Katsunuma Hikima 2017 <Wine>  750ml.
