In 1711, Ozeki was established by the first Chobei Osakaya of the Osabe family in Imazu, Nishinomiya City, Hyogo Prefecture. Our head office is still located there. Since its founding, Ozeki has enjoyed longstanding and widespread patronage as a choice sake from Nada. In 2011, thanks to this support, Ozeki marks its 300th anniversary. Known as a sake region, Nada (formally called Imazu Village in Muko County, Settsu Province) is blessed with so-called Miyamizu, or groundwater originating in the Rokko mountain system. The region is also ideal for rice production, including Yamada-nishiki, the renowned sake rice. In the Edo period, it's said, kudari-zake (sake shipped from Kyoto and Osaka to Edo) from Nada and transported from Imazu port to Edo by taru-kaisen (cargo-vessels carrying sake barrels) was both fresher and tastier than sake transported by land and was prized as a premium sake. While many of the old documents of this time were lost in the large-scale air raids in the last days of the war, the unrelenting pursuit of the craftsmen's skills found exclusively at Ozeki and a passion for sake-making have been handed on to successive generations of craftspersons, bringing Ozeki to this day. Japanese sake embodies a food culture passed on from antiquity. We believe sake emerges from an ongoing dialogue between the sake maker and natural elements, like the koji mold. The fermentation techniques we've cultivated represent an exciting area of technology, one that promises numerous unexplored treasures beyond Japanese sake. Back in 1600 AD, after the battle of Sekigahara, the Inaba family, who were renowned for their role in the battle, recieved the city of “Usuki” in Oita as a reward from the emperor. The Inaba family moved from the Gifu prefecture to Oita, where their brewing history began. Genroku, our first generation brew master started his own farm. And since then, 6th generations of Inanba family brew masters have past down their sake brewing methods. Safu Sake was founded 2021 during the pandemic, and succesfully brought this delicious sake from the Oita region to California. About Takenotsuyu Sakagura : The Brewery Mt. Haguro, in the middle of the “Three Dewa Mountains”, is well known amongst Japan’s holy places as the main for the Haguro sect of Shugendo, a form of mountain asceticism practiced in Japan that incorporates both the Shinto religion and Buddhism. Our brewery is located in the village of Haguro, which sits at the entrance to the Dewa Shinto shrine, and has since the Nara era been protected by these practitioners of Shugendo. When it was ordered that Shinto and Buddhism be clearly separated after the Meiji restoration in 1868, it was these Shugendo monks that led opposition to this. Originally, our brewery, founded in 1858, was one of many that brewed sake for use in the several annual ceremonies performed by these monks. Starting with our founder, who doubled as the master brewer, we have continued on as a sake brewer and in 1924 we carried the Main Sakagura of Three Dewa Mountains to here with traditional Good Yeast. And we formally incorporated as a company. Takenotsuyu, which means “Bamboo Dew,” is both our company name and the name of the main brand name we use, but its origins are not clear. However, bamboo has been produced in this area has from long ago, and there were many that would cut the bamboo from around the farms here and sell it. Even today, the surrounding bamboo cover our brewery, providing shade that keeps it cool in the summer. It is thought, and then, that what was once known as “that brewery that is surrounded by bamboo forest and makes good sake” eventually became known as “Takenotsuyu.” The Shonai region of Yamagata has long been one of Japan’s premier grain-producing regions, blessed with a good climate and lush nature. All of the water we use in brewing comes from a 300 meter-deep well located on our property that provides water that has flowed down from the “three Dewa mountains”. As for the rice we use for brewing, our brewers, including both our master brewer and his assistants, work together with members of the Haguro Sake Rice Research Group, and this group grows more sake rice than anywhere else in Yamagata. Currently, we are growing nine types of sake rice: “Kame no O”,“Kyou no Hana”,“Haguro”,“Kairyo-Sjinko”,“Miyama-Nishiki”, “Dewa Sansan”,“Dewa no Sato”,“Dewa Kiraly” and “Yuki Megami”. Sake brewing based on our unique rice-growing data means that since we know personally the producer that grows the rice for each tank that we brew, it is possible for use to make individual adjustments for each tank, and precisely prepare the raw materials so as to maximally benefit the fermentation process. The “three Dewa Mountains” are steeped in a lush natural environment. By striking a perfectly balanced fermentation in the successful fusion between traditional brewing techniques and the latest technology, maturing the sake in a stable environment for the appropriate period of time, we make sake that can be enjoyed across a wide range of temperatures, with plenty of flavor yet a clean finish, in what could be considered a new type of flavor profile called “rich yet light.” Our regular sake “Seishu Takenotsuyu” is made with locally grown rice and does not use any added sugars, flavorings or additives of any kind. Also, the alcohol we add to our honjozo - just like that added to our daiginjo - is made entirely from rice. We prepare the koji using in small trays for not only our contest sake, but also for all of our “Hakuro Suishu” line of products, as well as our “Junmai Takenotsuyu” sake as well. All fourteen of our brewing craftsmen are proficient in these methods. Because of the teamwork on the part of our brewers, our koji exerts a huge and positive influence on our brewing, and because we use detailed data to control our yeast starter and allow complete fermentation of the fermenting mash, we are able to mature all of our sake without any charcoal filtering at all. We also use a method of pressing sake in which the fermented mash is poured into cloth bags and tied hanging to bamboo poles, from which the liquid fermented sake drips down. This is called “shizuku sake,” and presents the most pure flavors of any sake. In the cold of the middle of winter, about seven days after sake has been pressed in this way, we remove fallen sediment and we bottle the sake. We pasteurize the sake one bottle at a time by gently showering it with hot water, and then chilling it quickly immediately afterward. Each sake product is stored in a refrigerator at a temperature that suits that product, awaiting proper maturation. It is then stored at freezing temperature until shipment. It is sake with a soft fullness, a smooth clarity, and a clean finish. With a solid rice-like goodness that spreads out, our intention is to provide our customers a glass of sake that brings them happiness. Shonai is a culinary Shangri-la blessed with ocean, mountains and plains. Nothing is better than sustenance gathered from local sources in our immediate environments, and we hope you will enjoy real nihonshu for your health during family get-togethers with such comforting food.

Kokuto shochu is a distilled spirit made exclusively in Amami Islands, Kagoshima, Japan. What is kokuto shochu? “Kokuto” refers to specially refined brown sugar and “shochu” is a distilled spirit made mainly in Southern Japan. In short, kokuto shochu is a distilled spirit made from brown sugar. While the other shochu distillers outside Amami are using sweet potato, barley, or rice as their main ingredients, kokuto shochu is made uniquely from brown sugar. We, the Machida team, share a common goal in that we want to share Amami’s exquisite culture and nature with the world. By handcrafting and distributing our kokuto shochu, we can express Amami’s beauty and spirit. [Nankai Group] Paul and Mai Nakayama went on their honeymoon in the spring of 2015 to Amami, Japan to visit her parents’ hometown. While at a local bar, Paul and Mai were introduced to a vacuum-distilled craft spirit. It was a black sugar shochu that was so easy to drink and so delicious that they enjoyed quite a bit of it. The next day they took a 12-hour boat ride to visit the distillery and learn more about their new favorite spirit. On the plane back to Los Angeles, Paul and Mai couldn’t stop thinking about their honeymoon shochu and how much their friends in California would love it, too. This was the beginning of Nankai Shochu and our mission to share shochu with friends old and new.

A portion of our blend is single-distilled via vacuum distillation to create a smooth and delicious finish. Vacuum stills lower the boiling point of alcohol by half, resulting in a softer, gentler distillation. Our artisans masterfully finish our select shochus in American white oak and French Limousin casks. Each shochu is aged up to 5 years before being blended into Nankai Gold. Unlike whiskey, shochu uniquely uses “koji” in the fermentation process. shochu is also single-distilled to preserve the luscious flavors and aromas of the source grain. Our Sake brewing process begins from rice harvesting, which we polish local Sake rice in-house and brew using the finest underground water source at the southernmost peak of the Southern Alps. The name of our top representative label brand "Shunnouten" was taken from the elegant meaning of "Spring Warbler Song", which is named after the praising song by the famous Waka poet Akiko Yosano who visited us and sang of great affirmation of the flavor, aroma, and presentation of this Sake brand. The quality of the Sake is refreshing with a good sharpness, and drinks dry, so we are particularly persistent on making pure rice Sake that retains the flavor of the rice. 'Double maceration' style is our own typical way to macerate the plum fruits twice for two years. This wine made from 100% Koshu grapes cultivated in granite soil at an altitude of about 400m.

We made this wine under strick control from grape cultivation such as increase the number of grains per bunch and make them small, denser, condensed and powerful grapes. Also we carefully put a green umbrella to every buch of the grapes to prevent sunburn and disease.

Fermented in a stainless steel tank, this wine has a fruity aroma and richness that preserves the individuality of our grapes.

B153 Muscat Bailey A Katsunuma Hikima <Wine> 750ml  Standard price in Japan ¥7,700

It made with richer and condensed grapes made in a typical sandy field along a river with about half amount of limited cultivation. 

This vineyard is unusual and surrounded by the cliffs so that the afternoon sun is blocked and the grapes turn a deeper purple color due to the temperature difference between day and night. After harvesting, it was aged for 10 months in barrels, and the spicyness and complexity was added to the original fruitiness and led the wine even richer.
