Located in the northwestern part of the Sendai Plain, Kami-machi is a fertile area where melted snow from the Ou Mountains constantly flows into the region. ■History of Tanaka Sake Brewery In 1789, the year of the French Revolution, Rinbei Tanaka, the most famous draper and money changer in the Date clan, founded the Tanaka Sake Brewery in this town blessed with water and rice. ■Passing Down the Art of Sake Brewing For more than 230 years since its establishment, Tanaka Sake Brewery has inherited traditional sake brewing techniques (kimoto and yamahai), using only the best quality water and rice. Tanaka Sake Brewery continues to use handmade processes, such as the koji tray method for all koji, traditional oke steaming for rice, and cedar heating for the sake mother, to produce "sake with assertive quality," and has become a brewery trusted by the community while maintaining the traditional sake brewing process. ■New Challenges We contribute to the local community by purchasing half of our sake rice from local contract farmers. Recently, we have obtained "kosher certifications(KLBD)” and "vegan certification" and are in the process of obtaining "organic" certifications.                              Recently, we have begun efforts to export our sake overseas, and it has already become one of the most imported sake brands in Australia.

"Kosher Certified (KLBD)" and "Vegan" certified. A special junmai sake made from Miyagi Prefecture sake rice, Kuranohana and Toyonishiki. With its rich flavor and moderate acidity, this sake can be served either cold or warmed. The soft mouthfeel from the aging process makes it ideal as a mid-meal sake. We recommend a temperature range of room temperature to 60℃. It can be served cold or warmed up, and is also delicious warmed up from a hotter temperature range. It is a favorite sake for connoisseurs. Sake that goes well with meat dishes in general, such as yakitori and steak, and fatty sashimi.

TOPMAN is located in Miki-city, Hyogo-Pref., Japan. We founded in 1924 and started the business to distribute quality hand tools for carpenters/constructors mainly. The overseas division has about 90years history and experience to export quality Japanese tools to overseas. Recently, we are certified "Japanese Sake export license" and try marketing Japanese Sake to the world, especially, "Inami Sake Brewery (稲見酒造)" who is located in our town. Actually, Miki-city is major production area for Sake rice "Yamadanishiki (山田錦)" and these harvested "Yamadanishiki" are distributed to other Sake Brewers in Japan. Inami Syuzou's Japanese Sakes are luxuriously using Sake Rice "Yamadanishiki" which is made from Yamada Nishiki rice grown at “special district A” in Miki City. YOROZUYA JOZOTEN, a sake brewery founded in 1790 in the town of Fujikawa, Minamikoma district of Yamanashi Prefecture, a land rich in nature overlooking the magnificent Mt. Fuji. Founded on the idea that "When it comes to local Sake, we want to keep to our local Sake rice, water source, and people", we have local Sake rice farm contractors as well as our own in-house rice milling, and so roughly 90% of the Sake rice used is taken from local suppliers in Fujikawa Town. Our Sake brewing process begins from rice harvesting, which we polish local Sake rice in-house and brew using the finest underground water source at the southernmost peak of the Southern Alps. The name of our top representative label brand "Shunnouten" was taken from the elegant meaning of "Spring Warbler Song", which is named after the praising song by the famous Waka poet Akiko Yosano who visited us and sang of great affirmation of the flavor, aroma, and presentation of this Sake brand. The quality of the Sake is refreshing with a good sharpness, and drinks dry, so we are particularly persistent on making pure rice Sake that retains the flavor of the rice. It's not a spotlight liquor label, but it's a liquor that puts the drinker in the spotlight. In 2019, the label was the gold prize winner at the Warmed Sake contest, the runner up silver prize of the best design category at the 1st Milan SAKE Challenge, and silver prize in the pure rice Sake category as well.

Satsuma Shiranami is a well-known sweet potato shochu in Japan.
It is made from Kogane Sengan, the most suitable sweet potato for shochu production in Kagoshima Prefecture, and rice koji, and has a strong, dark sweetness and a sweet potato-like aroma.
We are particular about our sweet potatoes and keep track of their production history. We also hold regular study sessions with farmers to improve the quality of our sweet potatoes.

It is made from Kagoshima sweet potato "Kogane Sengan" and domestic rice koji, and brewed by Toji Kurose, who inherited the shochu production method handed down in Satsuma, to produce the authentic sweet potato shochu "Satsuma Shiranami". It is bottled from highly rated shochu that was carefully selected by shochu tasters from among the many bottles in the brewery. This amber-colored, long-stored barley shochu is made from 100% barley, single distilled, and stored in white oak barrels for more than 3 years. Uses wisteria from Matsui Apple Orchard, an apple farmer in the same city. Matsui Apple Orchard is famous as a producer of apples for gifts, and Fuji apples grown at this farm have won the top prize at the apple competition in the prefecture for eight consecutive years. , The first champion outside of Aomori Prefecture, the apple of Japan's number one champion. Limited edition of 2000 pieces produced annually. This cider cider uses 100% Gunma Meigetsu, a specialty of Numata City, Gunma Prefecture. Gunma Meigetsu is also known as the “Phantom Yellow Apple” and is a rare variety that can cost more than 1,000 yen per kilogram. Because the production volume is small and it is not on the market. These apples are procured from the city's apple farmer, Matsui Apple Orchard. Matsui Apple Orchard has won top prizes for 8 years in a row in two categories, Gunma Meigetsu and Fuji, at apple fairs in the prefecture. The same apple orchard is also known as the pioneer of the Gunma Meigetsu since his father's generation pioneered the cultivation of the Gunma Meigetsu. This apple, which is famous for gift-giving, is difficult to obtain due to the flood of reservations every season. We use such luxurious apples. This cider won the silver prize at the 2022 Japan Cider Award, although it was the first to exhibit. Founded around 1700 (Genroku years). It has won more than 30 times Gold Prize in the Annual Japan Sake Award, and more than 180 in various sake contests, and the number of awards is still increasing. The awards include not only Daiginjo, but also IWC (International Wine Challenge) Great Value Award for ordinary sake “Yonetsuru Junsei.” In addition, it was adopted by Japan Airlines (JAL) for 5 years from 2007, and for ANA Holdings' business class in-flight liquor in 2017, 2020 and 2022. At Yonetsuru, we have been the first to grow high-quality sake rice locally and use it as a raw material to produce sake of world-class quality. This can be said to be a domain in the world of wine. Since 1983, we have formed the Takahata Town Sake Rice Study Group in cooperation with local farmers to promote the cultivation of rice suitable for sake brewing in fields near the kuramoto. Currently, we grow about 90 tons of sake rice in a field of about 20 ha. The breakdown is Dewa no Sato, Dewa Sansan, Miyama Nishiki, Yuki Megami, Kissui, and Kameno-o. Among them, Kissui is a sake rice variety that was registered as a new variety by Yonetsuru Kurabito in 1993, and is one of the results of sake brewing from sake rice cultivation. Brand name Yonetsuru has two meanings, Gratitude and Happiness.

This dry Junmai Daiginjo is made entirely from "Yuki-Megami," a rice developed in Yamagata Prefecture that is suitable for Daiginjo-shu.
It has a fresh aroma reminiscent of muscat, combined with the clean and crisp taste of "Yuki-Megami", and a clean aftertaste with a sense of umami, making it a good match for a wide range of dishes. It is especially good with meat dishes.

We want to make fizzy sake that can compete with Champagne. Yonetsuru Sparkling" was born from this desire.  The heart and rice on the label represent Yonetsuru's passion for rice cultivation and sake brewing.  Using a patented yeast, Yonetsuru Sparkling has a strong taste even at a low alcohol content.  It is a well-balanced sake that is not too sweet and can be enjoying with food.  The only ingredients are rice and rice koji.  It is a sparkling sake filled with carbon dioxide gas and offers excellent cost performance.

Sankeiruishu  Sake" is a SAKE made by brewing sake with sake.
Sake is usually brewed in three separate batches (three-stage brewing), and water is usually used in all three batches.  Sankeiruishu  Sake is brewed in the final stage (TAMETASOE) using "SAKE" instead of "water". This is a luxurious sake in which "water, water, and sake" are used instead of "water, water, and water" for the brewing process. The main ingredients are rice, rice malt, and sake. The taste is characterized by its elegant thickening and rich sweetness. It is attracting attention as a sake that can be enjoyed for its unique taste of maturity with the number of years it is stored.

Founded in 1914. We at dainagawa are a small sake brewery with nine brewers located in Yokote City, southern Akita Prefecture. In order to firmly convey the creator's thoughts to the fans, many departments are hand-prepared without relying on machines. We are particularly focusing on raw material processing. Rice washing work using the submerged water of Mount Horoha, which flows 20 meters directly under the storehouse, and the filling of the rice is done by hand. Centered on Mr. Yoshinao Sato, the atmosphere of the local air and brewery is carefully packed into one bottle, Since 2019, it has become a Pure rice preparation, and all production is bottled and stored in a refrigerator of 0 degrees. The Party Goddess UZUME series consists of three types: Elegant, Traditional, and for Relaxation.
Relaxation is the newest of the series, a sake that brings out the "sweetness" of the rice. It is more semi-dry in taste than simply sweet, with a sweetness that is hard to believe it is sugar-free, while the acidity balances the flavor. Therefore, it goes well with rich cream dishes and dishes characterized by sweetness and acidity. It is made with sake rice produced within 12 miles of the brewery in cooperation with farmers, which contributes to local industry as an SDGs and sustainable initiative. Standards are set for each grade and classified into five quality grades. Level 5, the highest grade, has no added sugar and produces the highest level of sweetness in sake. Level 3 is the most well-balanced sake, with the sweetest taste tempered by acidity, and is useful not only as a mid-meal sake, but also as an aperitif, after-meal sake, or as a sauce ingredient.

The quality of water has a great effect directly on the quality of sake. In Hashima city between Japan's two great rivers, the Kiso and Nagara rivers, Chiyogiku brewery uses Nagara river's deeply purified crystal-clear water pumped up from 128m underground. The water is very soft and pure containing moderate amount of minerals, and that makes the mellow taste of Chiyogiku Sake. Founded in 1738, Chiyogiku's ""Small brewing"" is taken place throughly by hands, starting from the process of washing rice, making Koji, and making Shubo. Especially the process of making Koji is done by the traditional and time-consuming ""Futa Koji"" method, to pass on the traditional method from the ancient times to the next generation. In “Large brewing”, Chiyogiku tries to keep the rice as untouched as possible in order to keep the complex fermentation in ideal condition, enabling Chiyogiku to maintain the quality of sake stable. Chiyogiku is also the pioneer in making organic sake. In 1998, Chiyogiku launched a project, “Hashima Experience”, with the group of local farmers to grow organic rice using rice-duck. Instead of using chemical herbicides, ducks released in the rice fields eat the weeds and feeds the rice seedlings. In the project, the participants including children experience the organic farming, harvesting, and the sake-making. It is held every year with the hope to create an opportunity to feel the gifts of nature and think about our lives in harmony and coexistence with nature.

A sake brewery founded in 1772. The underground water of the clear stream Nagara River is pumped up by a well and used as brewing water. Thanks to the water rich in organic minerals, the aroma and taste of Hyakusyun is very strong and firm until the end of the bottle. The main building built at the time of its founding is designated as an important cultural property of Japan. The name of sake "Hyakusyun" means "eternal spring time".

This Junmai Ginjo sake is made from 100% Minonishiki rice, a specialty of this region. The freshly squeezed junmai ginjo is immediately bottled undiluted and stored at a low temperature. Only the good part of the sake that comes out of the squeezing machine is bottled. Staying very fresh, pasteurized at the time when the maturity is optimal. The mellow aroma and taste of just squeezed is sealed in the bottle as it is. Lychee and melon-like aromas are very fruity and slightly sweet. Pairing with food is almost universal. The junmai ginjo sake that uses No. 10 yeast, which is a Japanese traditional type Sake yeast. The 10 in the name indicates No.10 yeast. No. 710 yeast is characterized by low acidity and a traditional aroma and taste. We used rice from Gifu Prefecture. The freshly squeezed junmai ginjo is immediately bottled undiluted and stored at low temperature. Only the good part of the sake that comes out of the squeezing machine is bottled. Staying very fresh, Pasteurized at the optimum time for maturation. The mellow aroma and taste of just squeezed is sealed in the bottle as it is. The scent reminds you of bananas and sweet potatoes. It is a dry type sake. For pairing with food, we recommend steak, smoked meat or fish and sour dishes. In Japanese cuisine, it goes well with shellfish sashimi and sushi, as well as traditional Japanese dishes that use traditional soup stock. In Western cuisine, it goes well with stewed dishes such as tomato-based fish and meat, and sour sauce dishes.Once you taste it, you will never forget the taste.

In 1612, the first Ihoue Hayashi settled in Hazaki in the Mino province, present-day Kani City of Gifu Prefecture. The brewery has inherited both the name "Ihyoe" and the method of sake brewing for generations, and is currently the 12th making one of the finest sake in the region. Mino province is well known for its pottery industry, for its soil contains excellent clay and crystal-pure underground water, and that water is enabling our brewery to make good sake. At the same time, together with the region's pottery ateliers, the region has created the finest sake-culture enjoying fine sake with fine cups. Hayashi Sake Brewery's product is all handmade in the old fashioned way. We start from planting rice seeds in our own rice fields mimimizing the use of agricultural chemicals. The yeast we use is also grown in our prefecture. Having dialogues with the local climate and nature, we are proud to deliver the wonderful gift of our region.

Our brewery's highest grade Junmai Daiginjo, 100% made from the best sake-brewing rice "Yamada Nishiki". The rice is polished up to 35% slowly for 3 days and 3 nights. After that, the rice is carefully dried for two weeks, and the Moromi malt was slowly fermented at low temperature for a long time. This is a small brewed junmai daiginjo made only with rice. We are a sake brewery with a long history in Nagano Prefecture, founded in 1865. We use the world-class natural water of the Northern Alps as our brewing water, and our main product is junmai sake, and we believe in the traditional "yamahai" method of sake brewing, which does not rely on brewing lactic acid. Our pursuit of quality to the extreme has earned us a reputation both domestically and internationally, and has led to an increase in fans and sales. We believe that sake is also a part of Japanese culture, and we are committed to spreading our culture throughout the world. As a brewery with a long history, we used to rely on old equipment and environment. In 2021, we restored the highest altitude brewery in Japan – a historic brewery established in 1793 but dormant since 2012 – into suginomori brewery. The brand name narai is derived from the town of Narai-juku where we brew our sake, and expresses our hope that our sake can help invigorate the historic town as a tourist destination.The key characteristics of narai are its use of natural mountain water, locally produced sake rice, and a manual brewing process by the hands of our master brewer. The water used to brew narai, which is vital to the texture of the sake, is the natural mountain water of Narai-juku that has long supported the daily lives of its local residents.The rice used for narai, which determines the taste of the sake, has been carefully grown by Farm Ichimaru, a farmer in Azumino, Nagano.Finally, we brew our sake in a small space of just 250㎡. While typical breweries use large tanks (3000 to 8000L) for mass production, we have scaled down to use smaller tanks of 900 to 1800L. Although this may limit our production capacity, this minimal and refined production process ensures that each batch can be lovingly and efficiently crafted under our master brewer’s watchful eye. At suginomori brewery, we are making sake with a desire to deliver the charms of Japan to people around the world who have yet to discover them. By delivering narai to the world – a Japanese sake that expresses the blessings of Nagano’s beautiful nature – we hope to weave a treasured part of Japanese culture into the future.

Water - The water used to brew narai, which is vital to the texture of the sake, is the natural mountain water of Narai-juku that has long supported the daily lives of its local residents. The water comes from a spring located near the watershed of the Shinano River and Kiso River, and is characterized by its super-soft texture, with a hardness level of less than 25. There are six water fountains in Narai-juku, and we use the mountain water from the same stream as the water fountain “Yokomizu,” located right across from our brewery. 

Rice - The rice used for narai, which determines the taste of the sake, has been carefully grown by Farm Ichimaru, a farmer in Azumino, Nagano. 
Kinmon-nishiki is a rare sakamai variety, produced through difficult cultivation techniques in only select areas of Nagano Prefecture.
A rice variety produced through cross-breeding the Takane-nishiki and Yamada-nishiki varieties. While born in the 1950-60s as an original sakamai of Nagano, demand later decreased as it did not match the cultivation and brewing techniques and taste trends of Japanese sake at the time. In recent years, however, as the only one of the five Nagano sakamai varieties with a direct lineage to Yamada-nishiki, known as the “king of sakamai,” this rice variety has garnered more attention due to its great taste potential. Its complex taste and elegant acidity also contribute to its potential to turn into a wonderful sake to pair with food. Kinmon-nishiki is a rare sakamai specialty that is only produced in select areas of Nagano, such as Kijimidaira.

The flavors are cohesive and clear. When steamed, this rice has a sticky texture; this makes it a challenging rice variety to work with, but also gives it a firm structure. When brewed into sake, it seems to hold this full-bodied flavor. (Master brewer Irie’s notes)

Water - Same as Kinmon

Rice - Sankei-nishiki is a sakamai variety increasingly used over the past 3 to 4 years due to its large shinpaku, or “white heart” – the starchy center core of each rice grain.
The name “山恵 (sankei)” is derived from the image of this rice variety as a “'blessing (恵) from the mountains (山) of Shinshu.” It is a young sakamai variety, only recently registered in 2020. Sankei-nishiki is known for its large shinpaku – the core of starch that occupies the center of a rice grain – which the koji-kin (mold) feed on to form rice koji, a crucial step of the brewing process. In fact, the Sankei-nishiki variety was introduced through cross-breeding for the purpose of producing larger shinpaku, as the shinpaku of Miyama-nishiki was gradually growing smaller due to repeated recycling of rice seeds. As a result, it is said that Sankei-nishiki has a higher shinpaku manifestation rate than that of Miyama-nishiki.

The flavors seem to change rhythmically, from the moment it enters your mouth to when you finish. When steamed, this rice has a fluffy texture. Because the taste is rather light, the aromas tend to leave more of an impression. A sake that flows and changes over time. (Master brewer Irie’s notes)
